EASY PAELLA 2 pkgs Rice-a-Roni Spanish Rice (or generic) 2 T Oil 2 cups Chicken, raw, cut in small bit-sized chunks 1 lb Kielbasa, sliced into 1/8 - 1/4² thick rounds 3-4 cups Small zucchini, sliced into 1/4² thick rounds 1-27 oz can Stewed tomatoes, coarsely chopped 3 cups Water COOKING: In LARGE skillet, brown chicken, Rice-a-Roni, and kielbasa over medium heat until the Rice-a-Roni is somewhat brown. Add the water, chopped tomatoes and their juice, and the seasonings from the Rice-a-Roni. Bring to a boil then reduce heat to low, cover, and cook for 5 minutes. Stir in zucchini and cook another 5 minutes. Stir and cook for 5 minutes more. Remove from heat (some liquid may remain). Pour into casserole pan. STORING AND DELIVERING: Cover with aluminum foil. Label with type of casserole and your name. Bring the casserole to church and put it in the church kitchen refrigerator. If you must cook it ahead of time and freeze it, thaw it in your refrigerator for two days before bringing it to the church.
